  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1 tablespoon and a half molasses
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup raisins soaked in hot water
  • 1 cup walnuts, chopped

Instructions

  1. Set the oven temperature to 350°F (175°C) for baking.
  2. Soak raisins in hot water for about 10 minutes, then drain them well.
  3. In a bowl, combine butter, brown sugar, and granulated sugar using an electric mixer on high speed for 2 minutes until creamy.
  4. Add egg, egg yolk, vanilla extract, and molasses to the mixture; blend until fully combined.
  5. Sift flour with baking soda and salt into the wet ingredients; mix on low speed just until incorporated.
  6. Fold in rolled oats, quick-cooking oats, drained raisins, and chopped walnuts gently but thoroughly.
  7. Prepare a baking sheet by lining it with parchment paper for easy removal of cookies later.
  8. Use a cookie scoop to portion out dough onto your hands to roll balls before placing them evenly spaced on the prepared sheet.
  9. Bake cookies in the preheated oven for approximately 8-12 minutes based on how chewy or crispy you prefer them to be; keep an eye on their color as they bake.
  10. Let cookies cool briefly on the baking sheet before moving them onto a wire rack so they can cool completely without steaming themselves soft.
