Description

Hootenanny pancake is a puffy, oven-baked pancake with a soft center and crisp edges. This fun breakfast dish is easy to prepare and pairs wonderfully with syrup or fresh fruit.

Ingredients

Scale
  • 6 large eggs
  • 1 cup milk
  • 1 cup flour
  • 6 tablespoons butter

Seasonings:

  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • ½ teaspoon vanilla

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. In a 9×13 baking dish, place the stick of butter and let it melt in the oven while you prepare the batter, keeping an eye on it to prevent browning; remove promptly if needed.
  3. In a bowl, whisk together eggs, milk, salt, cinnamon, vanilla extract, and nutmeg until frothy.
  4. Gradually add flour into the mixture until fully combined and smooth.
  5. Carefully pour this batter over the melted butter in the baking dish without stirring it together.
  6. Bake for about 25 minutes or until you see that edges are browned and center is set firmly.
  7. Once done baking, slice into eight pieces for serving with maple syrup or fresh fruit dusted with powdered sugar as desired.

Notes

Watch the butter closely as it melts in the oven to prevent browning, ensuring a perfect base for your hootenanny pancake.
