Description

Peach bellini cupcakes are soft and fluffy with a hint of peach flavor, topped with a light champagne frosting. These elegant treats are perfect for celebrations or brunch gatherings.


Ingredients

For the Cupcake:

  • 6 large egg whites
  • 10 tablespoons unsalted butter, at room temperature
  • 1 cup unsalted butter, at room temperature
  • 1½ cups granulated sugar
  • 5 tablespoons granulated sugar
  • ⅔ cup fresh peaches, diced into a ¼-inch or diced canned peaches
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon fine grain sea salt
  • ¾ cup champagne or prosecco or other sparkling white wine

For the Champagne Pastry Cream:

  • ​½ cup heavy cream, divided
  • ​2 tablespoons cornstarch
  • 1 whole egg
  • ​2 egg yolks
  • ½ cup champagne or prosecco
  • ​2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For the Peach buttercream:

  • Milk or cream to thin
  • ​6 cups confectioners’ sugar
  • ½ teaspoon LorAnn peach flavoring oil or ​​2 tablespoons peach schnapps
  • Chefmaster neon brite yellow soft gel food color
  • Chefmaster neon brite orange soft gel food color
  • Chefmaster red red soft gel food color
  • 2 tablespoons white nonpareils
  • 16 to 18 small fresh mint leaves (optional)

Instructions

  1. Start by combining butter and confectioners’ sugar in the bowl of an electric mixer with a whisk attachment, mixing until smooth.
  2. Gradually add milk or cream, beating until the mixture is light, fluffy, and reaches piping consistency.
  3. Incorporate peach flavor into the mixture while continuing to beat thoroughly.
  4. Slowly introduce food color until you achieve your preferred shade.
  5. Prepare a disposable piping bag fitted with a large French pastry tip for decorating.
  6. In a condiment cup, place some red food color; use a kitchen brush to apply it inside the decorator tip and along both sides of the piping bag.
  7. Core each cupcake using a paring knife by removing small sections from their centers; keep these pieces aside as they will be used later.
  8. Fill another disposable piping bag with pastry cream and fill each cupcake cavity with 1½ to 2 tablespoons of this creamy filling.
  9. Trim saved cake pieces flat so they can serve as lids over filled cupcakes before placing them back on top securely.
  10. Pipe frosting onto each cupcake in swirls then sprinkle white nonpareils generously on top right away after frosting application continues through all cupcakes until fully decorated
  11. Add fresh mint leaves atop each frosted treat just prior to serving for extra flair.
