  • 1 pound chicken breast, cut into cubes
  • 1 cup pineapple, cut into cubes
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • Salt and pepper to taste
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • ¼ cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken cubes and cook until golden and cooked through. Remove and set aside.
  2. In the same skillet, sauté onion, garlic, and bell pepper until softened.
  3. Stir in pineapple chunks and cook for 2 more minutes.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
  5. Lower heat, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.6. Return chicken to the skillet, mix well, and heat through.7. Garnish with green onions and sesame seeds before serving.
